Ingredients
  

  • 50 grams Chicken Breast cubed or diced
  • 2 tbsp White Onion diced
  • 1 tbsp Red Bell Pepper diced
  • 1 clove Garlic crushed
  • 1 tbsp Jalapeno minced
  • 1.5 cups Chicken Stock
  • cup Sugar Free Tomato Sauce
  • 1 tbsp Olive Oil extra virgin
  • 2 tsp Taco Spice Mix
  • 50 grams Avocado diced

Instructions
 

  • Sear chicken pieces slightly in olive oil.
  • Add garlic, onions, bell peppers, and jalapenos. Sweat until aromatic.
  • Add spice mix, chicken stock and tomato sauce. Simmer for 12-15 minutes.
  • Ladle into a bowl and top with avocados and cilantro.
